Sushi Cupcakes
While I initially came up with this idea for our anniversary night in, these are so good and I can't wait to make them for lunches this week!
Sushi Cupcakes
1 cup sushi rice
1 avocado, diced
1/2 cup matchstick carrots
1/2 cup cucumber, diced
1 cup cooked shrimp
2 Tbsp teriyaki sauce
Srirach mayo
Prepare the rice according to the package directions; set aside. Once cooled, distribute between 12 silicon muffin cups. Allow to set for a few minutes.
Cut the shrimp into smaller pieces then mix with the teriyaki sauce.
Carefully remove the rice cups. Layer with the remaining ingredients.
Tips and Tricks
#1: I'm already thinking about all of the other sushi roll combinations I can make with these easy to serve cups. You could also use mini muffin cups for more a smaller bite-sized version.
#2: These would travel well for lunches!
For our anniversary around the world tapas dinner, I paired this with a sparkling sake I found at our local Festival Foods liquor department. We love having sparkling sake when we go out for sushi but at this time our local favorite--Soon's has been closed for some time now. Their building was first damaged by a fire but then in early June 2020 when some peaceful protesters threw a Molotov cocktail into their shop. Luckily, we found out that the second reconstruction is nearly complete and can't wait to dine there again soon!
