Spicy Feta Dip

 Last weekend our anniversary plans were thwarted due to the unrest in Kenosha.  I was super bummed because we had a great tapas tasting with a wine pairing planned for one of the newest restaurants in town.  But, at the age of 35 with a 7PM curfew, we had to improvise!  I came up with our own tapas tasting and this was by far my favorite dish of the night.


Spicy Feta Dip

1 jar roasted red peppers
2 oz fresh goat cheese
2 oz feta cheese
1 Tbsp paprika
1 sprig rosemary (optional)
1 Tbsp fresh minced garlic
1 cup cherry tomatoes, halved
Pita chips or pita bread to serve

Preheat the oven to 400 degrees.  Dice the roasted red peppers.  In an oven-safe dish, mix the peppers, tomatoes, paprika and garlic.  Top with the goat cheese and feta cheese.  Add the rosemary to the top.  Bake 20 minutes or until the cheese is melted.  Serve warm with pita chips.

Tips and Tricks

#1:  I served this dish with pita chips; however, for a lightened version you could use celery and it would be equally delicious. 


We may not have gotten to go out for our anniversary but we were able to enjoy part of our meal in our beautiful backyard.  I will definitely miss sitting outside once winter hits!
