Greek Pasta Salad
Ready for a fun day out on a boat with friends, I wanted to make a more adult pasta salad for lunch. I love Greek/Mediterranean flavors so I whipped this up in no time.
Greek Pasta Salad
1 box farfalle pasta, prepared according to the directions on the package
1 English cucumber, diced
1 pint cherry or grape tomatoes, halved
1/4 cup Kalamata olives
2 Tbsp oregano
4 oz feta crumbles
1 bottle Greek salad dressing
1/4 cup roasted red peppers, diced
1 cup broccoli, chopped
1 cup baby kale
Combine all ingredients and mix well. Chill or refrigerate overnight before serving.
Tips and Tricks
#1: While many people like the chopped kale from the grocery store, I prefer baby kale since the stems/hard pieces aren't an issue.
