Cod in Creamy Roasted Pepper Sauce

 With Safer at Home still in place, we decided we needed a nice date night meal in.  While we were supporting our local businesses by getting take out on the weekend, there's just some food that doesn't travel well.  This meal felt upscale but was incredibly easy to make.

Cod in Creamy Roasted Pepper Sauce

2 cod filets, thawed

For the sauce:
2 Tbsp fresh basil
1 jar roasted red peppers, diced
1/2 cup heavy cream
1 tsp cayenne
1 Tbsp fresh garlic
salt and pepper to taste.

Bake the cod at 400 degrees for 20 minutes.

While the cod bakes, begin the sauce.  Mix the red peppers and all ingredients except the cream over medium heat in a small saucepan.  Bring to a simmer.  Just before serving, add the cream and heat 1-2 minutes.  Serve the sauce over the cod.

Tips and Tricks

#1:  Add veggies to the pan with the cod for a quick one pan meal.  I added sliced zucchini and broccoli.

#2:  This recipe makes quite a bit of sauce.  You could easily increase just the number of filets if you are cooking for more than two people without increasing the amount of sauce needed.

#3:  The extra sauce is very tasty on flatbread pizzas the next day and would be great over pasta as well.
