One Pan Baked Mahi Mahi with Broccoli

 I love one pan meals--why do more dishes than I have to?  This was quick and easy for a Friday night dinner in.

One Pan Baked Mahi Mahi with Broccoli

2 Mahi Mahi Filets
1/4 cup beer mustard
1/4 cup mayo
1/4 cup panko

For Broccoli:
2 cups broccoli
1 Tbsp olive oil
Salt and Pepper to taste

Preheat the oven to 425.  Mix the mayo and the mustard in a small bowl that will fit the filets.  Add the the panko to another bowl that will also fit the filets.  Dip the filets in the wet mixture then immediately into the panko.  Press the panko into the filets so that it sticks a bit better.  Set in an oven safe pan.  Add the broccoli to the pan; drizzle olive oil over the top and sprinkle with sea salt and pepper.  Bake for 15 minutes.

Tips and Tricks

#1:  If you want the bottom of the fish to stay crispy, try putting the fish on top of a canning jar ring inside the pan.
