California Roll Wrap

 The hubby and I needed a super simple, quick but healthy lunch on a busy Saturday.  This took just a few minutes to make and packed the flavors of one of our favorite sushi rolls.

California Roll Wrap

2 sandwich wraps or tortillas
1 can skipjack tuna, drained
1 avocado
1 cup matchstick carrots
1 English cucumber or 2 mini cucumbers

Set each wrap on a plate.  Layer avocado, carrots, tuna and cucumber on the top.

Tips and Tricks

#1:  I cut the cucumbers in strips; however, next time I think I would dice them so it is a little easier to eat.

#2:  I didn't find the wrap to be dry because of the avocado but you could add some mayo if you wanted it a little creamier.
