Bourbon Banana Nut Muffins
When you have bananas that are ripe and need to be used what do you do? Make banana muffins of course! Adding some bourbon gave it another layer of flavor.
Bourbon Banana Nut Muffins
1 1/3 cups flour
3/4 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
5 1/2 Tbsp unsalted butter--at room temperature
2/3 cup sugar
2 large eggs--lightly beaten at room temperature
2 ripe bananas, mashed
1/2 cup pecans
1 Tbsp bourbon
1 tsp vanilla
Preheat oven to 350. Mix the first four dry ingredients; set aside. In a large bowl, cream butter and sugar. Add eggs and vanilla. Fold in bananas, nuts and bourbon; add dry ingredients and mix well. Bake 20 minutes (12 muffins).
Tips and Tricks
#1: If you would rather make banana bread, cook for 60 minutes (makes 1 loaf).
